yes baby……..some kimchee

I never heard about till I had the course of making sauerkraut, I taste kimchee and I really liked it. It’s sharp and tasteful. Kimchee comes from Korea, it’s a traditionally dish. I must say I don’t know much about Korea ( only the strange regime in the north, what is really bizarre for me), but if it’s like the taste of kimchee I am curious about the country.
This recipe I took from internet from a Korean lady, she looks so sweet and expert on this area, I like her English too!Instead of anchovy sauce I used soy sauce of course this has a different taste but for me it was ok, I never took the real kimchee. This is a fermentation process, and I like to experiment with it!

recipe for 2 big jars of Kimchee*
1 Napa Cabbage cut in bite size pieces
1/2 Cup of Salt
5 Cups of Water

3-4Tbsp of Soy sauce
1/2 Cup of Crushed Red Pepper (chili flakes)
4 Pieces of spring onion cut in little slices
1/4-1/2 of a Rettich cut in julliene
1/2 Garlic bulb
Piece of Ginger
1/4 onion
1/2 of an Apple without peel
1/2 of a pear without peel
(she also put 4 tablespoons of sugar, i puuted in some more 1/4 th of an apple and  1/4 th of a pear, together)

A knife
a cutting board
2 big jars
a big bowl
a normal bowl
a measuring cup
food processor

how to make……
First cut the napa cabbage in bite size pieces. get te bowl and put the cabbage in the bowl, mix the salt with water and poor this upon the cabbage, mix the cabbage well with the liquid and set aside for a couple of hour.

Time to make the sauce.
Cut the apple, onion garlic and ginger so it can be put in the food processor. And of course put them in the food processor and make it like a sauce, really smooth. Leave it for the time being in the food processor.
Cut the onion and rettich in nice pieces, so for you must be easy to eat. (not too big not too small)
Get another bowl and mix the sauce with the onion and rettich. Set aside because now it’s time to poor out the water of the napa cabbage.
Be sure all the water is out of the bowl, rinse the cabbage two times. Now this is the nicest part, time to massage all the ingredients together, inclusief the red hot chilli flakes.
Make sure everything is mixed well!
Get the jars and put in the mixture till the jar is full. You can eat it immediately, but I let it stand putside the fridge for 24 hours and after I put it in the fridge, so the fermentation has started and the kimchee gets a little sour. (Like sauerkraut). You can hold it for a long time in the fridge!

Bye bye cs-ers…….fresh green apple/parsley smoothie

Phoef, very hard to wake up this morning. I really don’t know why…was I really too busy this week? Probably.
This morning the couchsurfers (Sarit and Aidan) from Israel  left, really great people, also vegans, ….Nice to talk about:why they became vegan, and how they ‘survive’ and of course abouttheir country and so on…and my green smoothie victims;)
So today I will taste my green smoothie on my own, but I must admit the taste of this smoothie is great and is defintely my favourite of the week (just 2 days to go).

The recipe of Emerald Applesauce by Aletha Nowitzky (2-4 persons)
4-5 apples (I used the red/yellow one I can imagine the green sour apples will be great also))
a bunch of fresh parsley
1/2 inch of ginger root (I used 1 inch by accident but it was great)

a blender/Magimix

How to prepare?
Cut the apple in pieces, if you use the Magimix smoothie kit you don’t have to remove the seeds and stems.
So now put all the ingredients together in the blender/Magimix and make a juice of it! Ready to drink!


do you remember me….cucumber/parsley smoothie

Yesterday I went to a concert at the Paradiso, here in Amsterdam, it was nice! Not so crowded at all, the music was strange but great and heavy and weird 🙂
But at the end I wanted to go to the entrance and then a guy came to me, I knew him and he me. Unfortunately I really don’t remember from where, I know his face very well…do I have a hole in my memory….? Especially the smile…a day after I still don’t know where I know him from, I have no name, the only thing he is now living in Hilversum and is a programmer in woerden…So I need more food for my brains, another smoothie in my one week green smoothie week. Let’s get back my memory….!

Green smoothie number three (2-4 persons)
(recipe from: Parsley Passion Smoothie by Sergei Boutenko)
1 cucumber
1 banana
1 bunch of fresh parsley (with stems also)
1 red/yellow apple (Fuji)
2 cups of water

Yes again the blender or Magimix with smoothiekit

Here we go again…..
I would say wash all the ingredients that needs to be washed. Cut them in pieces so you can blend it. I put the water at last in the blender, after I blend the fruits/vegetables.
Maybe it need to be stirred with a spoon so it’s a good mixture for a smoothie

I like this one it is fresh, and if you don’t like cucumber don’t make this…



The days after the wedding…..rararaw salat

Really tired, I can sleep all day but no time for it with two children….The day of the wedding was really great, the weather was not as we wanted to be, but we survived the rainy morning and the midday was really with some sun.
Everybody loved the things we made (me and Jael spend the day before all day in the kitchen to prepare some vegan dinners, cupcakes and spreads for 40 persons also Esther made some fantastic cold salats). The drinks were also great of taste, the people were nice, laughing and enjoying the picknick. My husband and I were really beautiful, he in a suit and I in a summerdress with flowers in my hair and the shoes?……I couldn’t find.. so no shoes and married on my naked feet. Great day with great people. And what was a experiment was eaten very well, I am talking about the rararaw salat…and here is the recipe. With help of the internet

Ingredients rararaw salat (for 6-8 persons)
1 kilogram of grated red/yellow beets
2  tablespoons of sesame seeds
2  tablespoons of pumpkin seeds
2 tablespoons of sunflowerseeds
+/- 500 gram of grated carrots
1/2 big red onion cut in tiny little pieces
juice of 1 lemon
4 grated apples (yellow/red sweet)
some chopped dill to taste (+/-3/4 cup)
some chopped parsley to taste (+/-1 cup)
Celtic seasalt/4 seasoning pepper everything to taste

a foodprocessor with a blade who grates beets
a nice bowl

Let’s begin…….
Get the beets, and grate them. After, grate the carrots and apple. Mix all the ingredients (beet, parsley, sesameseeds, pumpkinseeds, sunflower seeds, carrot, apple, dill) carefully and well. Put some lemon juice on top, so the beet will stay fresh. Serve with some nice dinner, or it is as a snack in the summer. Try for something different, walnuts or other nuts.

a little healthy delicious great snack… rice rolls (flower power hippie rolls:))

I forgot about them and then a friend of my, made them at her home, wow she made them great of taste and she inspired me of making them also again at my home. It’s easy and you can make them every time different, this little healthy snacks has many ways to make them perfect of taste.
Yes I am talking about rice rolls, they are like spring rolls, only with rice paper and not cooked just raw.

The ingredients for 8 rice rolls
8 sheets of rice paper
1/2 cucumber
1 string of celery
1/2 green sour apple
4 carrots
4 leaves of chard
flowers, like Indian cress leaves and borage to make the rolls colourful
(if you like some red hot chilli pepper, my boyfriend thought they needed it, I liked the taste)

a knife
a cutting board
a bowl filled with water to soak the rice papers

How to roll………
I would say first wash the vegetables, and let them dry!
Get the cutting board and a sharp knife, cut the celery string in 8 very thin strings, the carrots in half, leaves of the chard each in 4 pieces, the cucumber must be 8 pieces also (strings). The green apple I cut first in half and made thin slices of them and after I cut every slice in 4 strings!
Sort them out on the cutting board and get the bowl with water
Put in the 8 leaves of the rice paper, wait till they get soft and slimy, get one paper out very slowly, with to hands and with care. They break very quick.
On a flat underground you lay the paper down, fill the paper with a string of each vegetable and some apples and flowers. Beware your vegetables are 1 cm from each side, so the vegetables can be rolled into a roll, and you don’t have vegetables coming out of the sides.

First fill the rice paper with the vegetables (1 string celery, 1 row of carrot, 1 row of apples and so on), they must be shorter as the sheets

Roll the vegetables into the paper, just one turn

Fold in the sides
and roll further till you have a perfect roll, maybe it needs some practise but everybody can do this! Do it very tight but with care
So now the rolls are ready really fresh and raw, maybe what I say before if you like more taste from it, maybe put in some pieces of chilli pepper or maybe some sesame seeds. I liked this taste. You can make so many combinations with this rice roll, different vegetables and spices…..Nice as a snack or side dish, or instead of a salad

babyshower…and an apple-pie without sugar

A baby-shower, great! My friend is getting a baby and now we have a big party. What to make, she is not allowed to eat sugar and some other stuff. So after searching on the internet I found a vegan apple-pie recipe, I was following the recipe and I discovered it was a crappy one. So the bottom was ruined. So I was experimenting with ingredients to make the pie perfect.  Love to try this, so I started baking, I thought after getting the pie out it was totally failure but….yes I must say it was/is a nice tasting apple-pie! Now I will hope she likes it also, because pregnant ladies…….;)

Ingredients for a whole apple-pie without sugar (24 cm)
the bottom
2 bananas
160 gram of sifted flour
160 gram of spelt flour
1 teaspoon baking powder
180 gram of coconut-oil
1 teaspoon of apple cider vinegar
some flour to roll the dough on

the filling
4 big sweet apples (something like 1 kilogram ) cut in tiny pieces
200 gram of raisins soaked in water for 20 minutes (maybe if you don’t like raisins poor in some dried apricots didn’t try yet but I think it taste perfect)
14 dates from Iran (these are soft as chocolate and sweet) cut in tiny pieces
4-5 teaspoons of ground cinnamon
juice of 1 lemon
150 gram of mixed nuts (like almond, hazelnut, walnuts) crunched in tiny pieces (not like sand)

The kitchentools
a spring, with a diameter of 24 centimetres
a bowl
an oven
a little bowl
a fork

Let’s begin…
First it is useful to make the bottom, so melt the cocnut-oil au bain marie, in the meanwhile you can mix the dry ingredients together in the bowl (the cinnamon, flour, baking powder)
Mash the 2 bananas in the little bowl with a fork, till it’s something like yellow mud 😉
The coconut-oil will be soft by now, so poor in while stirring, the coconut-oil (not direct out the bowl because you will burn your hands), apple vinegar and the bananas. Mix this well till its a ball.
Time to roll out the 2/3 of the dough, the mine was too soft so I couldn’t really roll out the dough (maybe you can?) So I just immediately, spread it out, in pieces, in the spring/baking pan, like clay, I made the bottom on this way.  Maybe a little jigsaw game.
Make also the sides ( +/-5 cm high), because the filling must be poor in this dough.

Prepare the filling.
Cut everything what must be cut (the dates), soak the raisins and crunch the nuts. Mix this altogether in a  big bowl. Over the mixture you poor the lemon juice, the apples won’t get brown and get a fresh taste. At last you mix the cinnamon into the mixture, everything must be totally chaos.
So the filling is ready to be put on to the dough.
Get the spring again with the already prepared bottom of dough. Fill the bottom, and sometimes you have to push a little bit  so it will fit in the bowl of dough you made.
Yes everything is fitting? otherwise you can taste some mixture before the pie is ready 🙂

On top you will put the 1/3 of the dough( you put aside).
Again I was claying a top, I made 3 stripes diagonal and three stripes horizontal, so you get a nice square-effect.

In to the oven now, (175 degrees Celsius) bake the pie in 40-45 minutes golden brown, you will smell the nice pie when it comes out of the oven.
Cool it down, and cut in pieces so you can share this addicting pie. Great with whipped cream and tea

When I gave birth to Kaya Moon I already knew I wanted to bury his placenta under a  tree in the garden. I think it is a beautiful ritual, you always have some memory of your little men (giving birth) in the garden and the tree, who is growing from the very nutritious placenta. Some people eat their placenta or make pills from it they say it’s good after giving birth because of the iron deficiency (the child eat all the nutrient from you ;)) I must say it didn’t look tasty to me. But I believe it’s very good and make you recovery very soon!
Anyway the tree we selected was a apple-tree, with some nice sweet and sour apples. And yes we ate them and they are really tasty.
So here some information about the fruit apple

When to put in the garden?
we bought the tree when it was already 1 metres 50 and put it straight in the ground (we did this in august). First you make a big hole fill it with water and after put in the tree in the water so he can drink his roots full of water and he will be sucked into the hole. It’s very important so the tree will stand like a rock and will not be blown away by the wind.
Also on the side of the tree we put a pole and the three is held by the pole, so the tree has some support to stand strong.
Now you can close the hole with the soil you dug out!
Give your tree sometimes some food like mulch and fertilizer, when you want to promote the grow of your tree give some nitrogen rich fertilizer, when you want more fruit give some calcareous fertilizer

Nice solution
To make a nice birdhouse on the pole next to the tree where you give strength to the tree (the birds didn’t eat the apples maybe they will do next year?) or a bee-hotel (the bee-hotel I will explain later how to make)

When are the fruits ready for eating?
That depends on the tree you have! I have one which fruits are ready in the month October. You can see on the card (when you buy the tree) what belongs to the tree in which month you can except the ripe apples.

When to prune?
you have two periods where you have to prune before the winter and before the summer. Before the winter you take away big pieces of the branches in the summer just short pieces. Later in this blog I hope to write more about pruning. And to make different kind of shapes of the tree. But for now you have to search the internet for how to prune!
