Piano…..pumpkin pizza

Yippie jeeh! We’ve got a piano in tha house. Last week we drove with a rented car to veldhoven to buy a second hand piano with candles. Wow he is amazing, beautiful and now time to hire a professional piano tuner. Because I think he is really false! And after learn to play some piano, the books are already in the house….on the day we got the piano I made a nice pizza with pumpkin, something else then soup or pumpkin with rice. And last time I ate pizza I can’t even remember!

So here you have the recipe of a squared pumpkin pizza

Ingredients Pumpkin pizza (4 persons)ingr pumpkin pizza
for the topping
1 medium pumpkin cut in slices
3 twigs of fresh rosemary
4 tablespoons of pine nuts
150 (or more if you like) grams of black olives cut in tiny slices
1 tablespoon of white balsamic vinegar
1 leek cut in slices (very thin) if you can’t handle leek take something else maybe hot chilli pepper
mushrooms something like 100 gram cut in slices also
Some pepper/some Celtic sea salt
4-5 tablespoons of olive oil

for the bottom
2 tablespoons of extra vierge olive oil
150 gram of spelt meal
150 gram of flour
7-9 gram of dried yeast
3 cloves of garlic minced
150 millilitre water

Kitchentools
an oven
a food processor
baking paper
a bowl or 2
a wooden spoon

How to begin………
First we are going to make the bottom, so take a bowl. Poor into the bowl the flour and spelt meal, mix well with a wooden spoon, also poor in the dried yeast and mix again, after you put in the olive oil and mix again. Time to put the garlic in and also very slowly, while stirring, the 150 millilitre of water. There must be now a nice soft dough! When it’s to dry poor in some more water, if it’s too wet some more meal or flour. Leave the dough in the bowl and set aside for 30 minutes.
Time to prepare the topping, wash and cut all the ingredients! The pumpkin is going to be in the oven for 25 minutes at 200 degrees celsius, but before he goes into the oven you will sprinkle the pumpkin with oil (I think like 2 tablespoons, sorry I didn’t count the spoons) some pepper and maybe salt if you like. Just wait till the pumpkin is ready…

TICTAC TICTAC…………PLING

Time to get the pumpkin out of the oven the half of the pumpkin you put into the food processor together with the balsamic vinegar and 1-2 tablespoons of olive oil (and maybe some pepper) and you make purée of it. This you will put on the dough. So get the dough sprinkle the table with some flour, make a square of the bottom the same size as you oven plate (maybe 2-3 mm thick). On top you put the purée! Time to get your children so they can decorate the pizza (of do it your own), with slices of pumpkin, mushrooms, olives, some rosemary, pine nuts and leek. Sprinkle some olive oil on top and….yes lets put the pizza into the oven.pizza deco

You put the pizza in the oven like 14-15 minutes on 200-220 degrees Celsius. You can see if the bottom is like a real pizza bottom a little hard but not too hard, the pizza will be ready!
Clean the table, put the candles on some great music and poor in the white wine. Enjoy the pizza when it’s warm! And eat with the hands……….

mixed day…and ratatouille with minty bulgur

It has been a long time ago,  I went to a demonstration the last one was against nuclear power, this Saturday we had a busy program. We went to the ‘green day’ here in the area where I live, great to trade plants and cuttings. Yes we have more strawberry plants, some stevia plants, a Suisse mixture (someone went to Suisse and got some plants out of the ground) and new contacts!
After, we went for demonstrating on the dam square, a demonstration against big mega corrals, free the animals and let them live their life on a normal way.
In the end of the midday we had a party in a nice place in the Haarlemmerliede, a place nearby Amsterdam. Wow what a great location, great music, fun people, good talks and nice dinners/drinks.
Our day was complete the children where very sleepy and tired when we came home in the night. Love this days, only some more sun was welcome!
This is really a mixed day of everything, so a ratatouille dinner will fit perfect, it is a French dinner with mixed vegetables, long preparing time but it has a nice taste. My boyfriend wanted more herbs, but I liked it the way it is, so just taste what you like..
And the bulgur is just my variation/imagination on this dish

The ingredients
for the ratatouille
one egg plant cut in 4 lengthwise en further slice in big half moons
one zucchini cut in 2 lengthwise and then in big slices
6 cloves of garlic minced
1 red onion cut in pieces who aren’t too little
500 gram of tomatoes (I used half cherry tomatoes and half normal tomatoes) Cut in big pieces
120 gram of peeled tomatoes from a can (with some juice)
1 teaspoon of fresh lavender leaves
2 twigs of fresh rosemary
1 teaspoon of dried thyme (I didn’t had fresh one)
11/2 teaspoon of dried sage leaves
some olive oil

For the bulgur
1/2 cup of roasted sunflower seeds
1/4 cup of roasted pumpkinseeds
4 persons of bulgur (280 gram)
1/2 cup of chopped fresh mint leaves
juice of a 1/2 lemon
water to cook the bulgur in 2,5 times more then the weight of the bulgur

a good frying pan for all the vegetables, with a lid
a wooden spoon
a cooking pan
a frying pan to roast the seeds
a knife
a cutting board
Some plates
a cup for measuring

How to prepare….
Cut the onion and garlic (and also the other vegetables, and prepare the herbs), and get the frying pan. Poor in some oil, bring the oil to a heat and bake the onion and garlic for 2 minutes. Ready to put in the other vegetables (tomatoes, zucchini, egg plant, the ‘can’ of peeled tomatoes and the herbs) put the fire on the lowest heat and simmer with lid on top for 1 hour, so the herbs and vegetables can get their taste

In the meanwhile you can prepare the bulgur (this will take like 20 minutes, so you can time it together with the ratatouille, so it is finished at the same time). Cut the mint leaves and set aside. Roast the seeds in the frying pan without oil. Don’t walk away because when the pan is heating it can goes quickly with roasting the seeds and if you are to late it will burn and taste disgusting.
Time for prepare the bulgur (wash the bulgur till the water isn’t muddy anymore), get the cooking pan and fill with some water, bring the (740 ml of water) water to a boil and poor in the 280 gram of dried bulgur. Cook for 7 minutes and after set aside for 10 minutes.
When the bulgur has a little cooled down, get the seeds, lemon juice and mint leaves, mix this ingredients well with the bulgur! This part is ready.

And probably the ratatouille is also ready, taste and throw in some Celtic sea salt and pepper to taste. Or maybe you want more herbs, that’s your choice ;). Make the plates beautiful and impress your guests

the smell of fresh baked bread ………

Really the smell of fresh baked bread, makes people laugh, makes you forget all the problems, makes you hungry………..I am drooling at the moment I smell my own baked bread, it’s a bread at italian style….Can’t wait till it’s ready to eat. Just wait 10 more minutes before ready…
In the meanwhile, I am listening to and dancing on some nice music, that’s what I really like about facebook, I just post “I need some happy music” and then people recommend this music (katchafire, fat freddy’s domino, katzenjammer), thanks el Ron and Chrystal..So my discovering to some new music has started….
but still 8 minutes to wait ; ) to discover the taste of the bread…….”sigh”

The  Italian bread what makes you drool

the ingredients

200 grams of speltflour
100 grams of wheatflower
100 grams of all-purpose flour
2 tablespoons of olive oil
1 tablespoon dried rosemary
1/2 tablespoon dried oregano
5 sundried tomatoes (in oil) cut in tiny pieces
A pinch of salt
7-10 grams of dried yeast
1,5 cup of water
2 cloves of garlic (cut in little pieces)

the tools

a food processor with dough hook of your own hands
a wooden spoon
an oven at ca.180 degrees celsius (because my oven is gas and I don’t have temperature on it : ) )
a spring approx 24 inch (you can also use something else but I like the round bread)
a bowl

What to do to make you hungry

Just put all the dry ingredients together and mix, then poor all the wet ingredients (except the water) together. So now the easy job to put everything together in the food processor and mix well with the dough hook and slowly poor the water in the mixture, you will see there is going to be a dough step by step..when you have a mixture like a ball and it’s not too sticky then it’s perfect!!
If it’s too sticky just put a little more all-purpose flour in it, when it’s too dry just some water!

Now put the ball in a bowl and let stand for 30 minutes, you will see the dough is getting bigger : ), o yes for i forget cover it with a towel..
Ready to knead the ball again? Give the bread a little massage and afterwards you put it again in the bowl and cover it again and let stand for 30 minutes again…..

Now get the spring and put the dough in the spring and put some rosemary on the top for garnish. Now put your dough in the oven at ca.180 degrees celcius ( I never preheat the oven, because I know my oven the best and I bake on gas) and put the timer on 20 minutes, It must be 30 minutes in the oven but I always check if the bread is not burning or if there is something wrong you never know.

So the bread is ready when the sound of the bread is hollow (when you knock on the top of the bread).
