association……..green hulk wraps

Tomorrow is going to be a special day, we are going to be an association. It took a long time, but finally we are going to be. After.. we can have a contract for our gardens (vegetable gardens we ‘own’) and our own bank account,
Today I went to garden after a long time and I must say it looks perfect, I still have Swiss chard and  kale (a couple of Brussels sprouts). I found a new recipe on this site, thank you for sharing this…It’s so nice and I am addicted to eat. so here you are I changed a little of the ingredients and put in some curry powder.

Ingredients for 4 green hulk wraps
200 gram of kale (you can use also half swiss chard and half cavalo nero,palm tree kale, just experiment with this)
60 gram of cocnutoil
1 green cooking plantain
1 teaspoon of curry powder

a foodprocessor
an oven

How to make this wrap….
Wash the vegetables and let them dry (so the washing water is not on the vegetables any more), in the meanwhile get the peel of the plantain and put this together with, the coconut oil the spices and vegetables in the food processor. Make a smooth mixture of this.
When it’s smooth get the oven plate and put some baking sheet on top, the mixture you spread out on the sheet (like wrap thickness), make a square so you can equally separate the big wrap in little wraps.
Bake the wrap for 50 minutes on 150 degrees Celsius (hope next time I will have a food dehydrator, I think this is perfect for the dehydrator)Cut the big wrap in 4 pieces
Put on top of the wrap some tofu, or vegetables or just eat them the way they are. It is delicious!

Read all the books about pro-biotic I wanted to make my own kefir, and lucky me Maaike had a extra badge of water kefir grains. And also she had a fig and 2 apricot, yes the dried ones. And know the mixture is bubbling and really alive in the kitchen! I can say this water kefir is really well managed, maybe next time I want to make it with tea, or I even saw you can do it with fruit juice……First get some extra grains. Because they will grow very fast! You can give it away or save them in the fridge for weeks in their own water, some sugar like 20 grams on 1 litre, no dried fruit and so on. refresh the water each week!
Why kefir is so good, because it got some good bacteria, bacteria what is really good for the intestinal flora. And when you have a good intestinal flora you have a better immune system! So it makes you healthier! But it is also important to eat pre-biotica, maybe more important then pro-biotica!

Ingredients for the water kefir (to make 1 litre)
90  gram of water kefir grains
water like 900 decilitre
1 dried fig without sulphite (because you will kill the grains otherwise, so use organic dried fruit)
2 organic dried apricots without sulphite
35 grams of organic palm sugar (every time I try to put less sugar)
1/2 organic lemon with peel

Kitchentoolsingr kefir
a sieve without any metallic parts, because it will kill the grains (or some cheese cloth)
a bottle of glass for 1 litre of waterkefir
a bowl not of metallic

 

Ohh lalala……
Lets get ready, get all the ingredients, put them all together (I did water at last) in the bottle and stir softly without crashing the grains. The sugar has to be a little solved.
Now don’t do anything just put on the lid not to tight, because it will go gassy after a couple of hours. When you see the bubbles its a good sign. The bacteria are eating the sugar and the grains will move sometimes and will double themselves.
After 48 hours the mixture will be ready, take of the lemon and squeeze the juice out into the bowl. Take out also the dried fruit, you will see this has no taste anymore, so throw away!
Now get the sieve and put it on top of the bowl (no metal sieve, you will get the ‘water’ in the bowl and the grains in the sieve. The grains you can use again and if you have to much give it away. By putting them in a jar with some water and some organic sugar, refresh this once a week.

Piano…..pumpkin pizza

Yippie jeeh! We’ve got a piano in tha house. Last week we drove with a rented car to veldhoven to buy a second hand piano with candles. Wow he is amazing, beautiful and now time to hire a professional piano tuner. Because I think he is really false! And after learn to play some piano, the books are already in the house….on the day we got the piano I made a nice pizza with pumpkin, something else then soup or pumpkin with rice. And last time I ate pizza I can’t even remember!

So here you have the recipe of a squared pumpkin pizza

Ingredients Pumpkin pizza (4 persons)ingr pumpkin pizza
for the topping
1 medium pumpkin cut in slices
3 twigs of fresh rosemary
4 tablespoons of pine nuts
150 (or more if you like) grams of black olives cut in tiny slices
1 tablespoon of white balsamic vinegar
1 leek cut in slices (very thin) if you can’t handle leek take something else maybe hot chilli pepper
mushrooms something like 100 gram cut in slices also
Some pepper/some Celtic sea salt
4-5 tablespoons of olive oil

for the bottom
2 tablespoons of extra vierge olive oil
150 gram of spelt meal
150 gram of flour
7-9 gram of dried yeast
3 cloves of garlic minced
150 millilitre water

Kitchentools
an oven
a food processor
baking paper
a bowl or 2
a wooden spoon

How to begin………
First we are going to make the bottom, so take a bowl. Poor into the bowl the flour and spelt meal, mix well with a wooden spoon, also poor in the dried yeast and mix again, after you put in the olive oil and mix again. Time to put the garlic in and also very slowly, while stirring, the 150 millilitre of water. There must be now a nice soft dough! When it’s to dry poor in some more water, if it’s too wet some more meal or flour. Leave the dough in the bowl and set aside for 30 minutes.
Time to prepare the topping, wash and cut all the ingredients! The pumpkin is going to be in the oven for 25 minutes at 200 degrees celsius, but before he goes into the oven you will sprinkle the pumpkin with oil (I think like 2 tablespoons, sorry I didn’t count the spoons) some pepper and maybe salt if you like. Just wait till the pumpkin is ready…

TICTAC TICTAC…………PLING

Time to get the pumpkin out of the oven the half of the pumpkin you put into the food processor together with the balsamic vinegar and 1-2 tablespoons of olive oil (and maybe some pepper) and you make purée of it. This you will put on the dough. So get the dough sprinkle the table with some flour, make a square of the bottom the same size as you oven plate (maybe 2-3 mm thick). On top you put the purée! Time to get your children so they can decorate the pizza (of do it your own), with slices of pumpkin, mushrooms, olives, some rosemary, pine nuts and leek. Sprinkle some olive oil on top and….yes lets put the pizza into the oven.pizza deco

You put the pizza in the oven like 14-15 minutes on 200-220 degrees Celsius. You can see if the bottom is like a real pizza bottom a little hard but not too hard, the pizza will be ready!
Clean the table, put the candles on some great music and poor in the white wine. Enjoy the pizza when it’s warm! And eat with the hands……….

apple chutney…..apples from the garden

Nice to do,picking apples from the tree, our tree gave a lot of apples, only the peel was a little damaged, it had brown spots. But when you peel the apples you see a nice juicy apple. So I decided what to do with this apples, so I made apple sauce, apple pie and apple chutney. Making apple pie with my son is making a  mess in the kitchen, but you see how proud he was when the pie came out of the oven. And I am proud of the apple chutney (just to stay into the chutney mood)
And you can make it also now, you must wait 3-4 weeks after making it and when you wait longer, they say the chutney becomes better and better. Thanks for the recipe

Ingredients for 6 little jars of chutney
1,5 kilogram of apples, cut in squares
6 cloves of garlic (pressed)
150 grams of raisins
4 decilitre of apple vinegar
150 gram of sucanat (unrefined sugar)
1,5 teaspoon of cinnamon powder
1,5 teaspoon of Celtic sea salt
1,5 teaspoon of chilli flakes
1 teaspoon of clove powder
1 teaspoon grated fresh nutmeg
3 red onions cut in pieces

a cooking pan (big enough for all the ingredients)
6 jars cleaned and made bacteria free by cooking in water (sterilized)
garlic press
a wooden spoon for stirring

Lets make the chutney………….
Get the cooking pan and put in the vinegar,garlic, apples, onions and rasins. Heat up the pan and stir while heating the apples. When the apples are ‘boiling’ put in the spices (clove,cinnamon,nutmeg,chilli flakes, salt) and sucanat.
Let this mixture simmer for about 45 minutes, stir once in a while, and when the mixture is getting thick it will be ready to put into the cleaned jars.
Get the jars and an easy spoon to lead the mixture into the jars. Fill the jars till the top and put on the lid. I always put the jar upside down, so the jar will stand for cooling down on the lid. This is because of the vacuum effect. When you open the jar 3 weeks later you will hear the PLOP sound :). The chutney is ready to cool down and to store into the fridge for 3 weeks and after 3 weeks you can open the jar and enjoy the taste of the apple chutney!

getting addicted to chutneys…..green tomato chutney

It’s so strange a couple of years ago I tasted some chutney, but I really didn’t like. But now I really love chutney, so it’s true they say that taste will change every couple of years. So I made special for the potluck hold in eco-village in the place Bergen some chutney with green tomatoes. Finally we didn’t stay long at the festival and missed the potluck, it was rainy and the workshop we were taking wasn’t the workshop I expected. The area is very huge and big and i am curious how it will be when it is finished, how it looks like. They are really at the beginning of making a eco-village.
Anyway now I ate the chutney at my evening dinner, a good solution!
I took the recipe from internet but took a little twist on it…thanks girls/guys

Ingredients for 2 jars of delicious green tomato chutney
600 gram of green tomatoes, washed an cut in 4 or more tiny piecesingr green tomato chutney
100 millilitre of balsamic vinegar
60 millilitre of rice vinegar/ or apple vinegar
1 red chilli pepper cut in really tin slices, seeds removed
2 cloves of garlic minced
100 gram of raisins
2 teaspoons of dried ginger powder
90-100 gram of sucanat sugar
1/2 of a red onion cut in tny squares or strings

Kitchentools
a sauce pan
2 jars, cleaned very well in boiling water for 2-3 minutes

How to make this lovely chutney…..
Get both of the vinegars and poor them into the saucepan, heat the vinegar very slowly and poor in, while stirring, the sucanat sugar. When the sugar is dissolved throw in all the other ingredients and stir well, bring the mixture to a boil. Lets simmer this mixture for about 30 minutes, put the lid on the pan. Stir 1-2 times in the 30 minute time…
When the alarm goes and the 30 minutes are over take off the lid and stir the mixture again, let stand for like 30 minutes more. The mixture is going to be thicker that’s the goal. When you stir with the wooden spoon and you see on the bottom its getting like syrup….it’s ready!.

Get the jars and poor in the mixture, put the lid on the jars and set them upside down, so the lid will go vacuum.
You can eat the chutney directly or can save the jars in the fridge. I don’t know how long it will stay eatable, because i know this week all the 2 jars are finished!

crackers….finally

This I wanted to make already for a long time. But always something came in between, but this evening i made them. I was so hungry I wanted to snack, I just already two tangerines. Still had the feeling I must eat more 🙂 So i looked upon the internet and saw a recipe for flaxseeds crackers….yes this is going to be the snack for this night.
And for the next morning for breakfast or fore the children as a snack or lunch.
Here you can make it also…

Ingredients for 20 crackers
80 gram flaxseedsflaxseeds crackersingr
60 gram pumpkin seeds
50 gram sesam seeds
60 gram of sunflower seeds
175 millilitre of water
a dash of shoyu (soy sauce)
(some salt as you wish, I did without)

Kitchentools
a bowl
a spoon
an oven
baking paper

How to make….
Get the bowl, and put in all the seeds, mix this by hand, with a spoon. All the seeds are mixed well?
Put in the water and shoyu and mix again, let stand for 30 min or a little more. The water must be soaked by the flaxseeds.
If you think the ‘dough’ is ok, get the ovensheet, cover this with the baking paper and spread the mixture on the baking paper (something like 2 mm)
flaxseeds crackers baking plateTake a knife and alreay cut some crackers out (this is quit a job, you must do it carefully), when the crackers are baked you only can break them.
The mixture is now ready for the oven, bake them like 175 degrees celsius, for 25 minutes.
And voila the crackers are ready to be eaten! Let the morning be great with this crackers!

guitar and nice banana-datebars…..

Long time I didn’t write for the blog, of course it is getting boring but I was too busy. I was sick for one week, I am spending a lot of time in the garden, seeding seeds, harvesting, planning some special days in the garden and get rid of the weed. Organizing some little parties.

But for 3 weeks now I am learning guitar from out a book and it really enjoys and relaxes me. I started with a classical book and now I am going to learn some blues (because a friend of my is learning blues with the bass guitar), of course I am far from a good guitar player but I really like it, and I am making time for it and a lot of progress. This year I want to take singing lessons also. I think singing is a good way of expressing yourself, get rid of stress and so on. Will I be relaxt more?
I really was relaxt about the date bars I made (I read the backside of a supermarket bar and made it my own), I don’t have a food-dehydrator so I finished them by oven. But if you have one it’s raw! It’s a great way of eating some nice stuff when you don’t have a lot of time, you can keep them a long time in the fridge, today our friends liked the taste.

for approx.30 banana date bars
Ingredients
225 gram of dried dates
140 gram of banana
125 gram of oat flakes
50 grams of walnuts
40 gram of raisins
20 grams of pear juice
2 teaspoons of cinnamon powder (maybe you like more?)
5 teaspoons of hemp seeds

Kitchentools
a food processor
an oven or food dehydrator
an oven dish
baking paper
a wooden spoon to spread the dough in the oven dish

How to make the bars!
Get the food processor and mix all the ingredients together till it’s like a dough (if you like you can make it more crunchy, don’t mix it too long then!)
Get a squared oven dish and put in a layer of baking paper. Get the wooden spoon and the mixture, poor the mixture into the oven dish and spread it out ( like 1 cm thick) Of course you can make the decision how thick you like.
Put the oven dish into the oven, I baked it for 40 minutes on the lowest temperature, just look if the bars are more compact after the 40 minutes otherwise you put them longer in the oven. You think they are ready cut them in the sizes you like. Be creative and also experiment with other ingredients like cashews or chia seeds, berries and so on!

Another pie….strawberry/lemon raw pie

Yes another pie I made on yvi his b-day! Really delicious and fresh. But now I heard that agave syrup is also very bad for your health. I have to find it out…Is it true or just a story. I must say there is always discussion about sugars. Which are the good ones. The only good rule about this is not take it too much. We don’t eat every day pie, so once in a while some ‘bad’ sugar is ok I think, but we do not touch refined crystallized sugar.
Anyway here is the recipe, I made it last time, with blueberries. Sorry forgot from who it was…I took from the internet

The ingredients for a 18 cm pie
bottom
50 grams of almonds soaked overnight
50 grams of raw hazelnuts soaked overnight
3 tablespoons of raw cacao powder
150 grams of dried dates

layer
100 gram of extra vierge cocnutoil
300 grams of raw cashews soaked overnight
juice of 2 lemons
1 vanilla bean
120 gram of agave syrup

topping
1 box of frozen strawberries
2 tablespoons of agave syrup

Kitchentools
a foodprocessor
a spring ( I used a ceramic oven dish with some baking paper inside)

How to make the pie….
The soaking overnight take the longest time. Before you go to bed put the nuts in a bowl with water. The day after when you wake up, you can get ready for making the pie. First we start with the bootom, put all the ingredients togehter in the foodprocessor and mix till it’s a smooth dough!
Get the spring, cover this with some baking paper and put the bottom of the pie into the spring, make also the side from this pie with the bottom I think something like 5 cm high.
Put the spring into the fridge and now it’s time to make the layer. It’s going to be boring put put all the ingredients together in the food processor and mix until smooth (coconut oil, doesn’t have to be soft, cashews,juice of two lemons, vanilla bean and agave syrup)
When this is mixed well, get the spring out of the fridge and put in the layer above the bottom.
After put the pie again back into the fridge.
The last but not least the topping (last  made with blueberries). Again get the food processor put in the strawberries and agave syrup mix well till it’s smooth. (if the food processor doesn’t like the frozen strawberries wait till they are more soft and not frozen any more).
This is the topping, put this as finishing touch on the pie. Go to the freezer with the ppe, and put it like 6 hours in the freezer. Just before you want to eat it, take it from the freezer.
Enjoy this delicious pie and be creative to make your own taste on this pie, with different fruits

Yvi Fox is 2……after-eight pie

Always the question on a birthday what kind of pie to make. So searching on the internet, looking for an easy and tasteful recipe.And of course one without sugar. My family doesn’t taste the pies any more, because it is to strange for them and I must say they don’t know what they miss.
So after making the after eight pie (really it taste like, so if you don’t like that taste, don’t make the pie) we had a lot to eat for the day, on my son’s birthday, because the family didn’t eat the pie 🙂
So I made this delicious raw pie, got it from rawfoods.nl.

Ingredients for 24 cm diameter after-eight pie
de crust
1,5 cup of soaked almonds (I used with peel, soaked overnight)
1 cup of dates
1/2 cup of raw cacao powder
1 teaspoon of pure vanilla extract
some teaspoons of water

The filling
3 cups of raw soaked cashew nuts (soaked overnight)
1 handfull of fresh mint leaves
1 cup of water
1/2 cup of agave syrup
2 drips of mint oil (you do this at taste, but be careful the mint oil is really strong for taste)
1 teaspoon pure vanilla extract
some Himalaya rock salt
3 tablespoons of cacao butter
3 tablespoons of coconut-oil (I used without taste)

Kitchentools
a food processor
a spring like 24 cm diameter

How to make…
first make the crust, this is really easy! Get all the ingredients for the crust together and put this in the food processor with a s-blade. Mix till it is smooth like a crust, is it to dry put in some more water, but think in teaspoons of water not in tablespoons!
When the crust is all mixed, you can put it in the pie-tin, first the bottom and the the sides, de sides must be like 3-5 cm high.Put the spring into the fridge while you make the filling.

Now it is time to make the filling.
get the food processor again, make sure you cleaned it well after making the crust!
Put in the raw soaked cashew nuts,fresh mint leaves,water,agave syrup,vanilla extract,Himalaya rock salt and the coconut-oil. (so no mint oil and cacao butter)
Mix this all till it’s smooth.Time to put in the butter and the mint oil, please be careful with the mint oil, this is so heavy to taste ! If you like it more minty put in some more fresh mint leaves or oil.
You like the taste of the filling? get the spring with the crust and pour in the filling, make it equal. Time to put the pie in the fridge for at least 6 hours!

When you want to serve the pie, sprinkle some raw cacao over the top and some nice fresh mint leaves and almonds!

Pilaf with rooibos tea and walnutes……kurumu iri chameshi

Wow the trip to Japan is getting closer and closer, and the places where to go are now more fixed. I am looking forward to go. Last I met a girl from  my old job, we talked about Japan. She was there like 3 years ago and she said it’s so beautiful the people are friendly and willing to help even if they cannot speak English. Camping is nice and cheap, but other things in Japan are expensive and you must definitely take a JR pass (a Japan railway pass).
We are going to take a JR-pass because we want to travel from Tokyo to Hiroshima (and other places in-between) and back another route taking the Island what is close to Hiroshima and go back to Tokyo were will we fly back to Amsterdam. In the meanwhile I also make the mood by making Japanese food and drink Japanese beer. Yes I am ready to go for 1 month! I am curious how the children will like it!
Anyway here is a Japanese meal I made, I used it together with some parsnip and carrot (with garlic) straight from the oven.
The recipe is from the book Fresh Japanese by Yasuko Fukuoka.

The ingredients for the pilaf (2 persons)
225 gram rice
1,2 decilitre dashi (bouillon out of wakame)
1,2 decilitre of rooibos tea
25 millilitre soy sauce
25 millilitre sake
10 gram of washed arame and dried after (I used wakame seaweed)
1/2 tablespoon of walnut oil
75 gram of walnuts in little pieces
Some Celtic seasalt

a frying pan
a cooking pan

How to begin
Cook the rice with the rooibostea,soy sauce, sake, arame and dashi, for the minutes you have to cook the rice (I used 45 minute rice) look sometimes into the pan, if it’s too dry poor in some dashi if this happens, the rice must be make a crunchy noise at the 40 minutes, so now it’s ready. In the meanwhile you can crack the walnuts out of their shell, roast them on a low fire in a greasy frying pan, sprinkle with some Celtic sea salt.
Time to mix the rice together with the walnuts, your dish is ready
